All the natural Enzymes and Probiotics are alive! The milk is never heated past 102 degrees during the cheese making process. These are truly raw cheeses - soft or hard. Many so-called 'raw' cheeses are actually heated to 160 degrees! Just shy of the legal definition of pasteurization, but not exactly raw either. Our cheese is 100% raw and nutritious.
